Zesty Slow Cooker Barbecue Chicken

You may have noticed after reviewing previous entries that I am a big fan of the slow cooker. The extended cooking time allows better distribution of flavor in many recipes. The lower temperatures lessen the chance of scorching of foods which tend to stick to the bottom of a pan and burn easily in an oven. If you are making more than one dish the slow cooker frees your oven and stove top for other uses. Many people, including me, swear by their slow cooker.

This recipe is a quick-prep chicken breast recipe that gives a twist to basic barbecue chicken. You can serve this many ways including over baked potatoes or in burritos.

INGREDIENTS:
6 boneless chicken breasts
1 (12 ounce) bottle barbeque sauce
1/2 cup Italian salad dressing
1/4 cup brown sugar
2 tablespoons Worcestershire sauce
1 teaspoon liquid smoke

DIRECTIONS:
Place chicken in a slow cooker. In a bowl, mix the barbeque sauce, Italian salad dressing, brown sugar, Worcestershire sauce and liquid smoke. Pour over the chicken.

Cover and cook 3 to 4 hours on high or 6 to 8 hours on low. *

Yields: 6 servings

*Reheat leftovers in a skillet over low heat. Reheating in the microwave will dry out the chicken.
