Caprese Salad

La Phemme Phoodie has their first guest blogger! Welcome Shannon Herner to La Phemme Phoodie. We are featuring her Caprese Salad.

I am relatively new to the foodie world.  I did not cook until I moved out on my own. I thought that my future husband would have to suffer through endless frozen meals, PB & J sandwiches and take-out. After moving out on my own I discovered that I was pretty damn good in the kitchen. Cooking is my thing. Baking…not so much. Although I do make killer kruschiki’s my skills are really in cooking not baking.

I have a couple recipes that are in high demand. I think the most popular by far is my Caprese Salad. It’s an easy salad with a couple fresh ingredients. It’s always a crowd pleaser year round.

Caprese Salad

Ingredients

  • 15 medium size cherry tomatoes (cut in quarters)
  • 8 oz. mozzarella cheese (cut in blocks to be the same size as tomatoes)
  • 2 tbs. fresh basil OR 1 tbs. dried basil
  • 3/4 tsp. garlic powder
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 3 tbs. olive oil
  • 2 1/2 tbs. apple cider vinegar

Directions

Mix tomatoes and cheese in a large bowl. In a separate bowl whisk together the olive oil, apple cider vinegar, salt, pepper, garlic powder and basil.

Pour the dressing over the tomatoes and cheese mixture.

Fold ingredients, season with salt and pepper to taste.

    Caprese salad is one of my all-time favorite things. I love when Ari makes it for me in the spring with fresh basil and fresh tomatoes and mozzarella from the Italian Market, and really great olive oil and sea salt…………yum!!!!! OK now I am drooling.
