I love making a marinade from scratch. This recipe from Kittencal is my new go to recipe for beef or pork. London Broil was on sale so I decided to stock up on it knowing I had this inexpensive recipe to use. I was all set to put the grill to use only to find out that we were under a tornado watch. Needless to say I changed the dinner menu. We had leftover chicken instead. I would prefer to use the London Broil on the grill. I’ve prepared it in the broiler, in the oven and on the stove top. Nothing compares to the way it tastes when it is prepared on the grill. I put the meat in the marinade and froze it for a sunny day.
The leftover chicken was from a batch of chicken I made with a packaged seasoning mix. I am slightly obsessed with McCormick’s Hawaiian Luau marinade for chicken, pork or salmon.
I have had trouble finding this in my local grocery stores. I was in Florida recently and spotted a hefty supply at the local Sweetbay. I have six packets left and I’m starting to panic. The search is on to replenish my supply.
