Potato and Leek Soup

I recently returned from a trip to Ireland. Truly a gorgeous country. Everyone told me how green everything is. They were right. The other thing most people mentioned was that it was not a country you travel to for the food. I must respectfully disagree. I enjoyed almost every meal I had. They serve hearty comfort food. Lots of soups, meats and veggies. Basically everything that I love.

There was one soup in particular that ranked above the rest. It was a Potato and Leek Soup that I had at Bunratty Castle. I announced at the table that I was determined to replicate it when I returned home. I intended to ask the server what was in it but then I proceeded to have a wee bit too much to drink and promptly forgot to ask.

When I returned home I emailed Shannon Heritage to see if they had a recipe available. Unfortunately they do not have a recipe but they were kind of enough to supply me with the ingredients: leeks, onions, potatoes, chicken stock, cream and parsley. I’m looking forward to trying to replicate the soup and enjoy it over the colder months to come.
