I can confirm that it is an incredible combination of my two favorite meals. I’ve had buffalo chicken pizza and buffalo chicken salad in the past. Both were delectable. Both allowed me to indulge in my penchant for hot and spicy foods. This mac and cheese takes buffalo chicken to a whole other level. Comfort food at its best.
I am trying to stay true to my food allergies and avoid consuming wheat whenever possible. I used gluten free rice pasta instead of regular pasta; cornflake crumbs instead of breadcrumbs and rice flour instead of wheat flour. Everyone who ate it had no idea it was a gluten free recipe. Win. Win.

Let me caution you that this is not something you make during the week when you get home from work. The prep time is lengthy. Add in the time it takes to bake and you are looking at over an hour before you eat. I made this Halloween day while attending to the pitter-patter of ghosts and ghoblins. I missed a few occasions to hand out candy while I was trying to juggle getting this ready.
If you are cooking for those who may not enjoy spicy meals the amount of hot sauce called for creates a dish that borders on flavorful to spicy. Reduce the hot sauce in the chicken mixture by a 1/4 cup to make it a little less spicy.
I had this the next day for lunch. It tastes great reheated. The texture of the cheese is different but the taste is still there.
Of course as with any recipe I’m already thinking of ways I can tweak this the next time I make it. I want a little more crunch in the macaroni. I think I’ll double the amount of celery. I also would like to tase more blue cheese so I think I will double that as well.
