When I was little I did not always eat everything on my plate. I have always loved mashed potatoes but sometimes it was more fun to play with my food than to eat it. I remember sitting at the dinner table with my brother making mashed potato balls with our leftover dinner. Sometimes the mashed potato balls went airborne. Not exactly sure where my mom was when we were doing this. Clearly she had her back turned at some point.
I’m proud to announce that I no longer play with my food. In fact, I usually devour any type of potato mashed or otherwise. I’ve also discovered that mashed potatoes do a great job of smothering the taste of some not so tasty vegetables. I’ve perfected the fine art of the mix and cover. Hide the veggies under the potatoes either to make it look like you ate them or to use the mashed potatoes to mask the taste of the veggies. Win! Win!
This is a pretty basic recipe for mashed potatoes using red potatoes. I added the chive and onion cream cheese to give it a little kick.
