Ever since I made a ridiculously large batch of chicken stock I’ve been intent on consuming mass quantities of soup. After a quick scan of some items in my pantry I set out to make a soup with sausage as the main ingredient. My other goal was to squeeze in some veggies. I had two bags of fresh spinach (6 ounces each). I only used one bag when I made this but you could easily double the spinach without dramatically affecting the taste or consistency. I think kale would also work great with this recipe if you don’t have any spinach on hand.
