Does the sun have a sense of humor? The answer to that question is yes. I planned on snapping pics of this cornbread in the wee hours of the morning when my kitchen usually gets the most natural light. I staged the cornbread exactly how I wanted to photograph it, turned on the camera and zoomed in on the cornbread just as a nice little cloud moved into the area.
I abandoned my efforts and went to get ready to leave the house. One last peek around the corner into the kitchen confirmed the area was too dark to work with. Less than a minute later I was in my car pulling away when I glanced up to see the sun burst through the kitchen window. Hahaha sun. Very funny.
I’m not exactly thrilled with the pics I ended up with but I was working with a sun with a sense of humor. When I finally got another chance to take the pics the light was not much better than the first time.
I may not be that happy with the pics but I am thrilled with the results of my first attempt at a gluten-free and egg-free cornbread. It was incredibly moist. The jalapeno peppers gave it a nice little kick. The bread is just as fabulous without the jalapenos. I actually prefer to eat this bread plain which is a shocker because I always love to smother my bread with butter. When I put a dollop of butter on it the butter covered up the taste of the bread. As with many other gluten-free goods I’ve baked, my taste testers had no idea it was gluten-free let alone egg-free.
