In my parents’ home there are several food groups. There are the usual suspects: grains, vegetables, fruits, meat, etc. There is also ketchup. That glorious glob of sweet red condiment accompanies almost every meal. My dad puts ketchup on everything. When he’s not drowning his food in ketchup he is drizzling it with some sort of sauce. My mom is a great cook. He grew up in a home with a mother who is a great cook. He appreciates the taste of fine cuisine but deep down he really loves his ketchup.
I’ve inherited his love of condiments except I prefer to use something that is a little spicier. I have a stash of hot sauce in the office. I panic when I run out of salsa. My world simply collapses if we are low on barbeque sauce.
I’ve taken my obsession with quinoa and combined it with my love of spicy condiments to create this Mexican Quinoa Bowl. I originally referred to this as my refrigerator concoction. I’ve added quinoa to it and deemed it worthy of an actual name. It’s fast, easy and relatively healthy depending on what condiments you use. I make it in the microwave. I know many of you are opposed to using the microwave. This tastes good heated on the stove too.
