Cranberry Granola Crisp
I love the texture of crunchy food. I’m not afraid to admit that I’ll sneak a few potato chips into my sandwiches to give them an extra crunch. Nuts on top of a salad, a juicy bite of an apple or nibbling on some carrots are all easy ways to get my crunchy fix.
The one place I usually don’t find it is in my desserts. They are full of softer textures. This Cranberry Granola Crisp gives me my crunchy fix while making great use of fresh fruit. Desserts don’t always have to be bad for you. This dessert is packed full of fruit yet still maintains the sweet character that is typical of most desserts.
The recipe was created by Chef O’Keeffe for Udi’s. I followed Chef O’Keeffe’s directions but at the last minute decided to blend the fruit and oatmeal together to create a crispy bite throughout the dessert. Crisps are typically baked with the fruit mixture on the bottom then topped with crumbs, granola, etc. Whether you consider this a crisp, cobbler or some other variation the basic steps will work. It’s an easy way to use seasonal fruit with the Udi’s Cranberry Granola to create a phenomenal dessert.

Ingredients
4 granny smith apples, peeled, cored, and cut into 1/2-inch pieces
1 cup fresh cranberries*
1/2 cup raisins
2 cups granulated sugar
Grated zest of 1 orange
1 teaspoon ground cinnamon
1 cup orange juice
1 pouch UDI's Gluten Free Cranberry Granola
Directions
1. Preheat the oven to 380°F
2. In a large bowl, combine the granny smith apples, fresh cranberries, raisins, sugar, cinnamon, orange zest and juice.
3. Transfer the fruit mixture to an 8-inch square glass baking dish or into individual ramekins.
4. Generously Top the fruit mixture with the UDI's Gluten Free Cranberry Granola until fruit underneath is no longer visible.
5. Bake for 30-40 minutes or until the crumb topping has browned. Let cool and serve with a dollop of creme fraiche, freshly whipped cream or vanilla ice cream.
*Cranberries are not in season right now. I used frozen sweet cherries.

I do love my homemade granola and absolutely see how it could easily be a dessert; I know I sometimes feel a bit guilty having it with yogurt for breakfast!
