Peach, Prosciutto and Goat Cheese Pizza
Goat cheese is something I grew to love. It’s distinctive tangy flavor was not something I enjoyed when I was younger. Now that I’ve discovered how well it works with other ingredients I have incorporated it into many recipes.
Peaches are in season right now. I knew that the tangy flavor of goat cheese would work really well with the sweet flavor of the peaches. The prosciutto adds a distinct salty texture that is complemented by the fresh, fragrant flavor of the rosemary. I used white peaches in this recipe but any type of peach would work well with these ingredients.
This pizza recipe is a great way to beat the heat. I feel like I’ve complained a lot about our weather recently. I enjoy warm weather but the oppressive, sticky humidity we’ve been experiencing is just not enjoyable. I recently saw a commercial for football and got REALLY excited because it means that fall is getting close. I used to get depressed when I saw football commercials because I didn’t want summer to end. Now I am counting down the days until the official start of fall.

Ripe peaches are the highlight in this easy to assemble pizza recipe.
Ingredients
1 1/2 tablespoons olive oil
1 ripe peach, cut into thin wedges
4 very thin prosciutto slices, torn into pieces
1 1/2 ounces soft mild goat cheese, crumbled
1 teaspoon chopped fresh rosemary
1 package Udi's Gluten Free Pizza Crust
Directions
Preheat oven to 375 degrees.
Brush Udi’s pizza crust with olive oil. Arrange half of the peach wedges and half of the prosciutto pieces on the crust. Top each pizza with 3/4 ounces of the crumbled got cheese. Sprinkle 1/2 teaspoon of the rosemary over each pizza.
Bake directly on top rack of oven for 5-7 minutes.

I knew that was a Udi’s crust the second I saw that picture. We have pizza pretty much every Friday night and prefer Udi’s. I’ll have to try this soon!

I’m so glad you’re back in the group since my reader doesn’t work so I rely on Twitter, Triberr or returning comments left on my posts for new posts..of course missing loads because that is NOT a good method by any stretch. This pizza looks and sounds pretty amazing. Great way to take advantage of the abundance of beautiful summer peaches!

We are 2 weeks into my daughter’s gluten & casein free diet. I am going to need to pick up some of these gluten free mixes soon. I have been making everything completely from scratch & it is time consuming, which is not good when you have an impatient 5 year old at your heels.
