The Secret Recipe Club is a fun way to find “new to me” blogs that are full of creative and tempting recipes. It’s always hard to figure out just one recipe to make. I often find so many that I want to try. This month I was assigned the blog Hezzi-D’s Books and Cooks. Heather, a/k/a Hezzi-D, loves to bake, read and cook. During the day Heather works as a special education teacher serving children in grades 1-5 with special needs as well as regular education students who are at risk. It’s a job that she loves but at times the job can get stressful. She finds relief from the stress in cooking, baking, reading, and exercising.
I was torn between two recipes: her Award Winning Black Bean Burgers and her Santa Fe Chicken Salad. The salad won out but I will definitely make the burgers soon. I followed her recipe but only made two substitutions because of what I had on hand. I used tortilla strips instead of chips and white beans instead of black beans. The salad was very easy to put together and very refreshing in the heat wave that has hit our area again. It’s definitely going into my menu rotation.
