I was going to share this recipe with you yesterday. I loaded the pictures, typed up the recipe and sat down to write the post when I saw my Twitter stream start to flow with an anger I knew reflected a horror I was unaware of. At this point you know the details, what immediately followed was a lot of anger followed by a lot of longing to embrace a loved one and express what sometimes goes unsaid.

I saw many of my friends opt to stay home for a quiet night in and take pause during this busy holiday season to appreciate what they have. Many stepped into their kitchens side-by-side with their little ones to make memories and be thankful for the fact that they had a chance to see their loved ones again.

I share this recipe with you and hope that you make these cookies with someone you love and appreciate all that you have this season. My thoughts are with the community of Newtown, Connecticut and all of those affected by the tragic events yesterday.

White Chocolate Cherry Cookies

Yield: 3-4 dozen

Ingredients:

1 cup white rice flour

1 cup gluten-free all-purpose baking flour

1/4 cup coconut flour

2 teaspoons xantham gum

1 teaspoon baking powder

1 teaspoon kosher salt

1/2 cup white sugar

1 cup brown sugar

2 sticks salted butter, softened

2 large eggs (2/3 cup unsweetened applesauce if you need an egg substitute)

2 teaspoons vanilla

2 cups white chocolate chips

1/2 cup dried cherries

1/2 cup chopped pecans

Directions:

Preheat oven to 375 F.

Mix flour, xantham gum, baking powder and salt in one bowl. Cream sugar, butter, eggs and vanilla in a separate bowl and blend into flour mix. Fold in chips, cherries and pecans. Do not overmix.

Drop cookies on parchment paper covered baking sheet. Bake 12 to 15 minutes. Cool on wire rack.

    These are the perfect holiday cookie! It’s so sad to hear about these things happening in the world… it makes me realize it could happen to anyone and it’s amazing to have caring friends and family, especially at this time of year.

    I love your cookies, they look so chewy and delicious! I bought rice flour, but was trying to decide what to make…..this recipe sounds perfect! Yum, Hugs, Terra

    Mmm these are some amazing cookies!!
    I must say, with the sadness of the mass shooting it is commendable how the world has come together. In a way, it has forced us all to stop and appreciate life. The sad part is, it took something so terrible to take place.
