Buffalo Chicken Meatloaf with Blue Cheese Yogurt Sauce
Meatloaf is one of my favorite comfort foods. I love to make it. The problem with this meatloaf is that I had no intention of making it. This was supposed to be a post about Buffalo Chicken Meatballs and a tangy Blue Cheese Yogurt Sauce that would be perfect for your Super Bowl Party. One small problem, the meatballs were a mess.
I’m not going to share the recipe here because obviously it did not work out. I was adapting a recipe that someone else used without any problems. I made a substitution for the eggs and breadcrumbs by using tomato paste and gluten free breadcrumbs. The meat mixture was not the consistency it needed to be to make balls so I decided to throw a loaf together and call it a day. I did not feel like trouble spotting at that point. I’ll have to go back at some point and figure out where I went wrong. I think I needed to use fresh breadcrumbs instead of the packaged version that I used but I’m not sure.
The good news about this experiment is that I was able to make a very tasty yogurt sauce. I ended up nibbling on the sauce with some celery sticks and using it as a dipping sauce for the meatloaf. I’ll keep tweaking the Buffalo Chicken Meatballs recipe and report back once I have successfully made it. In the meantime, check out the recipe for the sauce.
Recipe from Food Network
Ingredients
1 cup Greek yogurt
1/4 cup crumbled blue cheese
2 tablespoons finely grated red onion
2 tablespoons finely chopped fresh cilantro leaves
Salt and freshly ground black pepper
Directions
Whisk together the yogurt, blue cheese, red onion, cilantro and salt and pepper in a bowl. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
