Chewy Chocolate Coconut Cookies
Most of us are stepping into the new year eager to wash away the damage we did to our diets during the holiday season. While I did indulge in a few sweets, the holiday season was not as indulgent for me as it normally would be.
As you may know, I am gluten-free and egg-free. However, I previously indulged here and there with non-friendly treats because my body could tolerate it in small doses. A few months ago my body began to rebel. The migraines came back with a vengeance. I knew I had to make some drastic changes to my diet. I completely eliminated gluten and eggs. For now, I’m not going to try to introduce them again until I am migraine free for an extended period of time.
I attended a lot of parties over the holiday season. I would estimate that I was not able to eat 90% of the food served at the parties. I didn’t have a chance to overdo it. I missed out on a lot of holiday cookies. While I did make myself some safe treats I found myself longing for something chocolate and indulgent once the new year rolled around.
I was playing on Pinterest and found this recipe from Healthful Pursuit. It is exactly what I was looking for. There are only a few ingredients, it’s naturally gluten-free and adaptable to be egg-free. It’s the perfect way for me to get my chocolate fix.
The only change I made was to use 1/2 cup of unsweetened applesauce instead of two eggs to make the cookies egg-free. My rule of thumb when baking egg-free is to substitute 1/4 cup unsweetened applesauce per 1 egg. It works great as a substitution in most baked goods.

These cookies sound fantastic! I adore chocolate and coconut together. It sounds like the applesauce is a perfect substitute for eggs and probably add a little sweetness and makes for a moist, chewy cookies. Lovely!

i pretty much add coconut in all my baked goods coz i like it so much. hehe. just saw the recipe and ingredients and these cookies are so easy to make that i just have to give them a shot

I am so glad you know what triggers your migraines…and that you can still find ways to bake yummy treats that won’t send your body into turmoil. These cookies look fantastic…coconut and chocolate is one of my favorite combinations!
