Yellow Cake with Creamy Chocolate Frosting

Chocolate Cake - Overview

As the only baker in my family, I am responsible for making everyone’s birthday treats. I find the process of baking so relaxing. I really enjoy tweaking various recipes to play around with the ingredients. I’ve made these One Bowl Chocolate Cupcakes on countless occasions. They are always a hit. While I will never turn down a chocolate cake, I’ve been craving a yellow cake. I have to admit I gave a few boxed cake mixes a try out of desperation. They were pretty awful. They tasted nothing like the traditional yellow cake I remember before going gluten free.

In my hunt for a good yellow cake recipe I looked for a gluten free flour blend similar to the blend I use: rice flour, potato starch and tapioca flour. I always have these three ingredients on hand. It makes it easier to whip up a sweet treat on a whim. I was thrilled to find a Yellow Cake Recipe fromĀ The Gluten-Free Homemaker. I made it exactly as listed except I substituted 3/4 cup of unsweetened applesauce for the 3 eggs (1/4 applesauce per egg). The cake had just the right consistency of moist buttery flavor. As you can see, I added a generous amount of my favorite Chocolate Frosting. This cake will definitely make an appearance at the next family birthday party!

    i have always wondered if a pear could be made into a sauce like an apple? and could that be subbed as does apple sauce?
    i have difficulty with apples so i am on the look out for an alternative. pears seem the least problematic to me. thank you!!

      I’m sure you can make a sauce with pears. It’s worth a shot. Let me know how it turns out.
