I have some advice for you. NEVER work on a recipe for your blog when you are hungry. See, I made these waffles in the morning before eating breakfast. By the time I mixed up the batter, set up the waffle maker and organized the props I was STARVING. As a result, I took about 2.2 seconds to spread the batter out in the waffle maker instead of actually taking time to make sure it was spread evenly. They may not look photo worthy but they are definitely worth making.

Each month when I receive my assignment email for The Secret Recipe Club I quickly scan my assigned site to check out who they are and what they have shared so far. Picking the actual recipe usually comes later. I’m just excited to see if I know them and if not, get to know more about them.

This month I was assigned Heavenly Treats and Treasures by Grace. I knew exactly who was behind the site because she was recently assigned my site and made a brilliant adaption to one of my recipes. See, I made a very simple healthy dessert called one-ingredient ice cream which is made solely out of bananas. I’ve seen people adapt it to include chips, chocolate sauce and other traditional ice cream toppings. What I had not seen to date was the inclusion of Nutella. Grace added a couple tablespoons of Nutella to transform the ice cream into something extraordinary. Her Magic Nutella Ice Cream looks so divine.

1. Know that living gluten free is not a fad.
For many, living gluten free is a medical necessity. Whether someone suffers from Celiac or gluten intolerance, their body reacts to gluten. The reaction can manifest itself in the form of fatigue, headaches and digestive problems to auto-immune disorders and malnutrition. I was diagnosed after experiencing incapacitating migraines. All of the aforementioned issues are serious medical conditions that can sometimes be life threatening. If you are reading this because you have to be gluten free know that you are not alone. If you are reading this because you want to learn more about living gluten free to assist a friend or family member, be aware that it is a medical condition. It is not fad. Someone who has to live gluten free cannot make the decision to go off their diet without serious consequences to their health.
